An ode to all things pumpkin!!


I love fall and I love pumpkins. They go so well together, that tonight I'm making Penne with Creamy Pumpkin Sauce. Actually, it will be more like farfalle with creamy pumpkin sauce. I really like to combine it with some great focaccia (I have a great recipe which I'll post another time) and whatever vegetable I've got around. I discovered the recipe a couple years ago... you can find it here. The fried rosemary is fabulous!

Hawaiian Haystacks

To get things started...this doesn't really qualify as a "recipe" per se, but since we just ate it for dinner I thought I'd include it as an idea for a quick and easy dinner.
-
Ingredients: (serves 4)
2 c. cooked rice
2 c. cubed boneless/skinless chicken
1 can cream of chicken soup
3/4 can chicken broth or water
1 can chow mien noodles
-
optional ingredients:
1 c. chopped celery
1 chopped tomato
1 c. grated cheddar cheese
1 c. cubed pineapple
1/2 c. chopped green pepper
1/2 c. chopped green onion
1/2 c. slivered almonds
1/2 c. grated coconut

Directions: Combine soup and chicken broth or water in a saucepan. Add cubed chicken and simmer 8 to 10 minutes until heated throughout. On plate, stack rice, chow mien noodles, and gravy. Then add optional ingredients.
